Windows files keeps rolling back - how to stop?

For some strange reason files on windows keep rolling back to earlier versions.

There’s no pattern, some files keep rolling back whilst other’s remain untouched.

This causes problem with code because what I know has been completed has now been undone by rolling the file version back.

I’ve not got any version control on with Windows 11, but its still happening.

I think it should be called nuisance ware, but would definately be classed as malware.

What directory? I think I’ve heard of this before and it was windows AV I think. But it only did things in certain directories.

It was some work folders, because thats what I’m currently using. It might have been other folders and files, but I’ve not gone through them so I havent spotted them.
